How did the COVID pandemic affect eating habits in the United States? Two OSU faculty members decided to investigate that question and teamed with ACCAD and OSU Libraries to re-design a website to collect recipes and stories from the public about pandemic eating habits.

Dr. Phillip Gleissner and Dr. Harry Ell Kashdan collaborated with ACCAD and OSU Libraries Digital Humanities Librarian Dr. Leigh Bonds to create The Covid Food Archive. The website encourages anyone from across the globe to submit their own recipes and stories to document how their relationship with food changed during the pandemic. Visitors to the website can also explore with other contributors' submissions, view photos, read stories about these Covid Food adventures.

The ACCAD team is Professor Maria Palazzi, Interactive Designer Taylor Olsen (MFA Design, 2020), and Graduate Research Associate Gabriela Miniello (MFA candidate in Design).

Dr. Gleissner and Dr. Kashdan are also finishing a new book that will be published in 2023, featuring essays by renowned immigrant chefs, activists and scholars in the food industry, entitled “Resilient Kitchens: American Immigrant Cooking in a Time of Crisis.”

The Covid Food Archive project is part of a larger collaboration between ACCAD, OSU Libraries, and the Humanities Centers Consortium to build a Digital Humanities support network at OSU. This network prototype was funded through the Global Arts and Humanities Discovery Theme.
